Fish curry can be made in different ways. And one of the most delcious and simple way is to cook it in coconut milk gravy. This is one of the traditional way of making fish curry in Kerala.
For coconut milk, you can either grind fresh coconut and get the milk out of it or use tinned coconut milk or coconut milk powder.

How to make Fish Curry in Coconut Milk
Ingredients
Fish – 500 gm
Ginger (julienned) – 2 1/2 tbsp
Garlic (julienned) – 1 1/2 tbsp
Shallots (julienned) – 2 tbsp
Green Chilly (slitted) – 6
Tomato (sliced) – 1
Curry Leaves
Gambooge – 3 (clean & soaked in 1/2 cup of water)
Turmeric Powder – 3/4 tsp
Hot Chilly powder – 1 1/2 tsp
Kashmiri Chilly Powder – 2 tsp
Thick Coconut milk – 1 cup
Thin Coconut Milk – 1 cup
Coconut oil – 6 tbsp
Salt – 2 tsp
* If you are using tinned coconut milk or coconut milk powder, you can make thin and thick coconut milk out of it.
Directions
- Place a pot on the stove and add 5 tbsp of coconut oil.
- Once the oil is hot, add 2 tbsp of shallots, curry leaves, 1 1/2 tbsp of garlic, 2 1/2 tbsp of ginger, 6 slitted green chilly and mix.
- Add 2 tsp of salt and mix. Close and cook for 2 minutes.
- After 2 minutes, open and mix it. Close and cook for another 1 minute.
- After 1 minute, open and mix it.
- Add 3/4 tsp of turmeric powder, 1 1/2 tsp of hot chilly powder, 2 tsp of kashmiri chilly powder and mix well.
- Add soaked gambooge along with the soaked water and mix.
- Once it starts boiling, add 1 cup of thin coocnut milk and mix.
* If you are using tinned coconut milk, you can add 1 cup of diluted coconut milk now. - Once the mixture starts boiling, add the cleaned fish pieces and stir as shown. Close and cook for 15 minutes.
- After 15 minutes, open and stir.
- Check the salt. Add only if needed, based on your taste.
- Add sliced tomato, close and cook for 5 more minutes.
- After 5 minutes, open and mix gently.
- Add 1 cup of thick coconut milk and stir as shown. If you are using tinned coconut milk, add only 3/4 cup now.
- Once it starts boiling, add 1 tbsp of coconut oil and curry leaves. Close and take it off from the stove.
- Fish curry is ready to serve.
