This Kerala style pepper chicken roasted in onion, coconut flakes and black pepper would taste great. And it is a quick and easy recipe. The main flavour of this chicken is from the crushed black pepper added at the different stages of the preparation. The heat of the dish is only from black pepper and green chilli, we are not adding any chilli powder. Using crushed pepper instead of store-bought pepper powder will enhance the flavour of the dish.
This dry pepper chicken roast will go well with appam, chapati, kerala parotta and ghee rice.

How to make Pepper Chicken
What you’ll need
Chicken – 750 gm
Onion(sliced) – 3
Tomato(sliced) – 1
Ginger(julienned) – 1 tbsp
Garlic(julienned) – 1 1/2 tbsp
Ginger&Garlic Paste – 1/2 tbsp
Green Chilli(slitted) – 2
Coconut Flakes – 1/4 cup
Lime Juice – 1 tbsp
Black Pepper(crushed) – 4 1/2 tsp
Turmeric Powder – 1/3 tsp
Garam Masala – 3/4 tsp
Bay Leaf – 2
Cinnamon – 1/2 inch
Cardamom – 3
Fennel Seeds – 1/4 tsp
Curry Leaves
Coconut Oil – 4 tbsp
Salt – 1 1/2 tsp
How to make it
- To marinate the chicken, add cleaned chicken pieces into a bowl. Add 1 tbsp of lime juice, 1/2 tsp of salt, 1/2 tbsp of ginger&garlic paste, 1/4 tsp of turmeric powder, 1/4 tsp of garam masala, 1 1/2 tsp of crushed black pepper and curry leaves. Mix it well. Cover and keep it aside.
- Add 3 tbsp of coconut oil into a pan. Once the oil is hot, add 1/4 cup of coconut flakes and mix. When the coconut flakes is sauteed, add sliced onions. Add 2 slitted green chilli, 1 tbsp of ginger, 1 1/2 tbsp of garlic, curry leaves, 1 tsp of salt and mix.
- Close and cook for 2 minutes. Stove must be on a medium heat.
- After 2 minutes mix it. Saute it for 2 more minutes.
- Once the onions are sauteed, add a pinch of turmeric powder, a pinch of garam masala and 1 tsp of black pepper and mix. Transfer the sauteed mixture into a bowl.
- Add 1 tbsp of coconut oil into the same pan. Add 2 bay leaf, 2 cardamom, 1/2 inch cinnamon and 1/4 tsp of fennel seeds and mix.
- Add the marinated chicken and mix it well. Saute the chicken for 1 minute.
- After 1 minute, close and cook the chicken for 20 minutes on a medium flame.
- After 20 minutes, mix it. Chicken must be cooked well by now. Turn the stove to high heat.
- Add the sauteed onion mixture and mix.
- Add 1 tsp of black pepper, 1/4 tsp of garam masala and 1 sliced tomato. Close and cook for 3 minutes.
- After 3 minutes mix it well. Saute it for 2 more minutes.
- Add 1 tsp of black pepper and curry leaves.
- Pepper chicken is ready, take it off from the stove and serve.
