Chicken fry is easy to make. The important thing about chicken fry is that it must not be dry. It must be charred outside but juicy and soft inside. Otherwise, you will not be able to enjoy it.
After marinating the chicken, it would be good if you can keep it in the refrigerator for 2 hours. We will be pan frying the chicken, to make it a bit healthy 😊

How to make Chicken Fry
Ingredients
Chicken (with bone) – 1 kg
Green Chilli (slitted) – 4
Curry Leaves
Lime Juice – 1 tbsp
Ginger (crushed) – 1/4 tbsp
Garlic (crushed) – 1 tbsp
Turmeric Powder – 1/2 tsp
Kashmiri Chilli Powder – 3 tsp
Garam Masala – 1 tsp
Black Pepper Powder – 3/4 tsp
Fennel Seeds (crushed) – 1 tsp
Salt – 1 1/2 tsp
Oil
Onion & Garlic (for garnish) – Optional
Directions
- Let us marinate the chicken first. Add 1 kg cleaned chicken pieces, 1 tbsp crushed garlic, 1/4 tbsp crushed ginger into a bowl.
- Add 1 1/2 tsp of salt, 1/2 tsp of turmeric powder, 3 tsp of kashmiri chilli powder and 1 tsp crushed fennel seeds.
- Add 3/4 tsp of black pepper powder, 1 tsp of garam masala, curry leaves, 1 tsp of oil, 1 tbsp of lime juice and mix it well.
- If possible, keep the marinated chicken in a refrigerator for minimum 2hrs.
- To fry the chicken, add 6 tbsp of oil to a pan.
- Once the oil is hot place the marinated chicken pieces as shown.
- Flip the chicken pieces and reduce the flame/ temperature to medium.
- Once both sides of the chicken are charred close and cook for 5 minutes.
- Open and flip the chicken pieces. Close and cook for 5 more minutes on medium-high flame / temperature.
- After 5 minutes add few slitted green chillies and curry leaves and mix.
- Chicken fry is ready, take it off from the pan.
- Fry the rest of the marinated chicken in the same way.
- Into the same pan, add 1/4 cup of sliced onion and 1 sliced garlic and saute it for a minute.
- Sauteed onions are ready so take it off from the pan and serve it on the top of chicken fry.
- Chicken fry is ready to serve.
