Sardine is one of the tastiest fish, fried or curry. This sardine fry we are going to make will taste great and different. Fish will be marinated first and then kept in the fridge or outside for at least 30 minutes before frying. We will pan fry the fish instead of deep frying them.

- First, let us prepare the mixture for marinating fish.
- Add 1/2 roughly chopped ginger, 2 shallots and 2 garlic cloves chopped, 5 bird eye chilli and 4 tsp of green peppercorns, 1 tsp of salt, 1/2 tsp of turmeric powder, curry leaves, 1 tbsp of lime juice, 1 tbsp of oil into a jar and grind them.
- While grinding, make sure it is ground coarsely and with thick consistency.
- Clean the sardine using lime juice & salt and make cuts/slits like this.
- Coat the fish evenly with the prepared mixture.
- After marination, keep the fish in fridge or outside for minimum 30 minutes before frying them.
- To fry sardine, add 3 tbsp of coconut oil into a pan.
- Add curry leaves and place the fish in the pan. The flame/temperature should be medium-high.
- After 1 minute, flip the fish. This time flame/temperature should be medium.
- After 2 minutes flip them again.
- Add 1 tsp of coconut oil. Close and cook for 1 minute.
- After 1 minute, open and flip the fish.
- Reduce the flame/temperature to medium and let the fish be charred and brown. Flip them in between.
- Once fish is charred and brown, take it off from the stove.
- Sardine fry is ready to serve.
