Pineapple pachadi is one of the important side dish of Kerala sadya. This is made at home mainly for Vishu and Onam sadya. It is also called madhura curry. In some parts of Kerala, this is made using curd. But, I always make it without curd. In addition to pineapple we add riped plantain and grapes as well. This madhura curry will complement the other spicy dishes in the sadya.

How to make Pineapple Pachadi
Ingredients
Pineapple (finely chopped) – 200 gm
Ripen Plantain (finely chopped) – 50 gm
Grapes – 15
Grated Coconut – 150 gm
Jaggery – 120 gm
Cumin Seeds – 1/4 tsp
Mustard Seeds – 1 1/4 tsp
Coconut Oil – 2 tbsp
Dry Red Chillies – 2
Curry Leaves
Turmeric Powder – 1/2 tsp
Chilly Powder – 3/4 tsp
Water
Salt – 3/4 tsp
Directions
- Add 120 gm of jaggery and 1/2 cup of water into a saucepan.
- Once jaggery is melted completely, take it out from the stove. Strain and keep it aside.
- For making coconut mixture, blend 150 gm of grated coconut and 1/4 tsp of cumin seeds.
- Add 1/4 tsp of mustard seeds and blend it again. Do not add water while blending.
- This must be the consistency of coconut mixture (Use PULSE option to grind if you are using a mixer grinder).
- Add 200 gm of finely chopped pineapple, 1/2 tsp of turmeric powder, 3/4 tsp of chilly powder, 3/4 tsp of salt into a pan and mix.
- Add 3 tbsp of water. Close and cook for 4 minutes.
- After 4 minutes, add 50 gm of chopped plantain. Close and cook for another 3 minutes.
- After 3 minutes, open and mix it well.
- Add 1/3 cup of melted jaggery and mix.
- Close and cook for 2 minutes.
- After 2 minutes open and mix. Add coconut mixture, close and cook for 1 minute.
- Now open the lid and mix it well.
- Check the taste.
- Add the grapes, close and cook for 1 minute.
- After 1 minute, mix everything. Close and keep it aside.
- To make the tempering, add 2 tbsp of oil into a pan.
- Once the oil is hot add 1 tsp of mustard seeds.
- When mustard seeds splutter, add dry red chillies and curry leaves and mix.
- Pour this tempering over the pachadi.
- Our Pineapple Pachadi is ready to serve.
