How to make Scrambled Egg Curry
Ingredients
Egg – 2
Coriander Leaves – 150 gm
Green Chilly – 6
Tomato – 1
Oil – 1 1/2 tbsp
Mustard Seeds – 1/2 tsp
Turmeric Powder – a pinch
Salt – 1/2 tsp
Water – 2 tbsp
Directions
- Blend 150 gm of coriander leaves, 1 chopped tomato, 6 roughly chopped green chillies and 1/4 tsp of salt.
- This should be the consistency. I have added 2 tbsp of water while blending.
- In a bowl beat 2 eggs with a pinch of salt.
- Add 1 tbsp of oil in a pan.
- Once the oil is hot pour in the beaten eggs and scramble it.
- Scrambled egg is ready. Take it off from the stove.
- Add 1/2 tbsp of oil into the pan.
- Once the oil is hot add 1/2 tsp of mustard seeds.
- When the mustard seeds splutter, add a pinch of turmeric powder, 1/4 tsp of salt and mix.
- Add the blended mixture and mix well.
- Check the salt and add only if needed.
- Once the mixture starts boiling add the scrambled egg and mix well.
- Egg curry is ready to serve.
