Avial is a great dish which is made by cooking mixed vegetables in coconut mixture. It is one of the main dishes in a Kerala sadya and a common dish among Keralites. It is a healthy dish since we use different vegetables.
In this recipe, I will show you how you can easily make avial in a pressure cooker. You can cook all vegetables together in the cooker and add coconut mixture.

How to make quick and easy Avial
Ingredients
Snake Gourd (Padavalanga) – 100 gm
Raw Plantain (Ethakka)- 100 gm
Drumsticks (Muringakka) – 100 gm
Ivy Gourd (Kovakka) – 100 gm
Ash Gourd (Kumabalanga) – 120 gm
Indian Cucumber (Vellarikka) – 120 gm
Elephant Yam (Chena) – 100 gm
Carrot – 200 gm
Long Beans (Payar) – 60 gm
Raw Mango – 60 gm
Shallots – 2
Green Chilly – 4
Curry Leaves
Grated Coconut – 250 gm
Cumin Seeds – 1 tsp
Coconut Oil – 2 1/4 tbsp
Salt – 1 1/2 tsp
Turmeric Powder – 1 1/4 tsp
Water – 1/4 cup
Directions
- To make coconut mixture, grind 250 gm of grated coconut with 1 tsp of cumin seeds, 2 chopped shallots, 2 sliced green chilly and curry leaves.
- This must be the consistency of the coconut mixture (Use PULSE option to grind if you are using a mixer grinder).
- Add 1 1/4 tbsp of coconut oil into a pressure cooker and spread it.
- Add all the sliced vegetables.
- Now add 2 slitted green chilly, sliced raw mango, curry leaves, 1 1/4 tsp of salt, 1 1/4 tsp of turmeric powder and 1/4 cup of water and mix well.
- Close the pressure cooker and let it cook.
- When the first whistle is about to blow take it off from the stove.
- Once the cooker is depressurized transfer the cooked vegetables to a pot.
- Add the coconut mixture on top of the cooked vegetables.
- Close and cook it for 1 minute on a medium flame/temperature.
- After 1 minute, mix it well.
- Check the taste.
- Add 1/4 tsp of salt mixed with 2 tbsp of water and mix well.
- Add 1 tbsp of coconut oil and curry leaves. Close and take it off from the stove.
- Avial is ready to be served.
