Ingredients:
- Indian Gooseberry – 8
- Ginger (julienned) – 1 tbsp
- Garlic (julienned) – 3 tbsp
- Green Chilly (slitted) – 1
- Curry Leaves
- Coconut Oil – 1 1/4 tbsp
- Mustard Seeds – 1/2 tsp
- Asafoetida – 1/4 tsp
- Fenugreek Powder – 1/4 tsp
- Turmeric Powder – 1/4 tsp
- Spicy Chilly Powder – 1/2 tsp
- Kashmiri Chilly Powder – 2 tsp
- Salt – 1 1/2 tsp
- Vinegar – 2 tsp
- Water – 1/2 cup
Directions:
- To cook the gooseberries, add water to a pressure cooker and keep a vessel inside it
- Cut the gooseberries as shown and place it in the vessel
- Close the lid and let it cook
- After the first whistle, keep it aside and let it cool
- Open the pressure cooker, once it is depressurized
- The gooseberries are cooked perfectly. Take it out from the cooker
- Place a kadhai on the stove and add 1 1/4 tbsp of coconut oil
- Add mustard seeds and let it splutter
- Now add julienned garlic, ginger, slitted green chilly, curry leaves and saute it
- Add 1 1/2 tsp of salt and mix
- Add asafoetida, fenugreek powder, turmeric powder, spicy chilly powder, kashmiri chilly powder and mix it. Make sure it doesn’t get burnt
- Add 1/2 cup of water and mix it. Let this mixture boil
- Add 2 tsp of vinegar and mix
- Check the taste
- Add cooked gooseberries and mix it
- Let it boil
- Once it starts boiling, keep it aside
- Gooseberry pickle is ready and can be served
