Khaman is a food common in the state of Gujarat in India. It is made from soaked and freshly ground channa dal or channa flour (also called gram flour or besan).
We are going to make instant khaman using gram flour. To make the khaman fluffy, we would be adding Eno in the batter. Eno is a fruit salt which is composed of basically 60% baking soda and 40% citric acid.

Ingredients:
- Gram Flour – 1 Cup
- Rawa/Semolina – 1 1/2 tbsp
- Salt – 1/2 tsp
- Turmeric Powder – 1/4 tsp
- Ginger & Chilly Paste – 1 tbsp
- Curd – 2 tbsp
- Lime – 1 tsp
- Oil – 2 tbsp
- Water – 1/4 cup
- Eno Fruit Salt – 1 tsp
- Asafoetida – a pinch
- Mustard Seeds – 1 tsp
- Green Chilly – 3
- Onion Chopped – 1/2
- Chopped coriander Leaves
Directions:
1. Grease the tin with oil and keep it aside.
2. Prepare a steamer by adding water and placing an idli mould in it. Close it and let it boil.
3. To prepare khaman batter, seive gram flour, turmeric, salt and semolina into a bowl.
4. Add ginger&chilly paste, lemon juice, curd and oil. Mix it well by adding 1/4 cup of water.
5. Check the consistency.
6. Add eno fruit salt, mix it very well and pour it in to the greased tin and place it in the steamer as soon as possible.
7. Let it cook for 10-15 mins.
8. Once cooked, remove from the steamer and keep it on the cooling rack.
9. After 2-5 mins, cut it into square shape pieces.
10. Now make a tempering for khaman by adding oil, mustard seeds, green chilly, coriander and asafoetida.
11. Spread the tempering on khaman. Garnish it with chopped onions and coriander leaves.
