Samosa is a fried or baked pastry with spiced potato filling . The filling and the shape differs depending on the region. In India samosa is a favourite street food and is accompanied by sweet and spicy chutney. Samosa is a served as a starter in many restaurants. The recipe to make samosa is very easy but it include certain steps. In this I am making traditional northindian samosa with sweet and spicy chutney.

Ingredients:
Dough:
- Plain Flour – 1 1/2 cup
- Hot Oil – 4 tbsp
- Salt – 1/4 tsp
- Carom Seeds – 1/4 tsp
- Water – 1/4 cup
Green Chutney:
- Coriander Leaves (chopped) – 1 cup
- Mint Leaves (chopped ) – 1/4 cup
- Green Chilly (Chopped) – 3
- Ginger – 1/4 inch
- Garlic – 1/4 clove
- Lime Juice – 1/2 tsp
- Salt – 1 tbsp
- Oil – 1 tbsp
- Water – 2 tbsp
Sweet & Tangy Chutney:
- Jaggery – 120 gm
- Water – 3/4 cup
- Oil – 1 1/2 tbsp
- Tamarind (lemon size)
- Salt – 1/2 tsp
- Asafoetida – 1/4 tsp
- Cumin Powder – 1/4 tsp
- Turmeric Powder – 1/4 tsp
- Chilly Powder – 1/2 tsp
Samosa Filling:
- Boiled and chopped Potatoes – 4
- Green Peas – 1/2 cup
- Green Chilly (finely chopped) – 2
- Ginger (crushed) – 1 1/2 tsp
- Coriander Leaves (chopped) – 2 tbsp
- Oil – 2 tbsp
- Cumin Seeds – 1/4 tsp
- Coriander Seeds (crushed) – 1/4 tsp
- Fennel Seeds – 1/4 tsp
- Salt – 3/4 tsp
- Turmeric Powder – 1/2 tsp
- Coriander Powder – 1/2 tsp
- Lime Juice – 1/2 tsp
- Oil (To fry samosa)
Directions:
- Take 1 1/2 cup of plain flour, add 1/4 tsp of salt, 1/4 tsp of carom seeds and mix
- Add 4 tbsp of hot oil and mix it well
- After mixing oil, it must look crumbly like this
- Add 1/4 cup of water and knead dough as shown. You can add some more water, if needed, but don’t add too much
- Add 2 drops of oil and spread it on the dough. Cover and keep it aside
- Let us make spicy green chutney
- In a grinder, add chopped coriander leaves, mint leaves, green chilly, ginger, garlic, 1/2 tsp salt, 1/2 tsp lime juice and 1 tbsp oil and grind them
- I have added 2 tbsp of water while grinding to make a fine paste like this. Our Chutney is ready
- Now, let us make sweet chutney
- First melt jaggery by adding 1/2 cup of water and strain it
- Heat 1 1/2 tbsp oil in a pan
- Add 1/4 tsp of asafoetida, 1/4 tsp of cumin powder, 1/4 tsp of turmeric powder, 1/2 tsp of chilly powder and mix it well
- Now add half cup of tamarind water and stir it well
- Add 1/2 tsp of salt and mix it
- Now add 3/4th of melted jaggery and stir
- Once it starts boiling, switch off the stove. Our chutney is ready
- Lets make the samosa filling. Heat 2 tbsp of oil in a pot.
- Add 1/4 tsp of cumin seeds, 1/4 tsp of fennel seeds and 1/4 tsp of crushed coriander seeds and mix
- Add crushed ginger and mix
- Add finely chopped green chillies and 1/2 cup of green peas and saute them for a minute
- Now, add 1/2 tsp of turmeric powder, 3/4 tsp of salt and 1/2 tsp of coriander powder and mix well
- Add the cooked & chopped potatoes and mix
- Add chopped coriander leaves and 1/2 tsp of lime juice and mix
- Our samosa filling is ready. Make sure to cool it before stuffing.
- To make the samosa, roll the dough as shown
- Bring together the edges and stick them. You can use water, if needed, to stick.
- Add the filling and seal it as shown.
- To deep fry samosas, heat enough oil in a kadhai and fry them
- To airfry samosas, keep samosas in the fryer at 180°C for 15 minutes. After 15 minutes brush oil on them and cook for another 15 minutes
- To bake samosas, preheat the oven at 180°C and cook them for 15 minutes. After 15 minutesbrush oil on them and cook for another 15 minutes
- Our samosas are ready and can be served with spicy and sweet chutney
- Let us make samosa chat
- Add 2 samosas into a bowl as shown
- Add 2 tbsp of sweetened curd
- Add 1 1/2 tsp of green chutney and sweet chutney
- Add 1 1/2 tsp of finely chopped onion
- Garnish with chopped coriander leaves.
- Samosa chat is ready
