Kallappam is one of the popular breakfast recipes in Kerala. Batter for this appam is mainly prepared by adding toddy (kallu), but you can prepare this by fermenting rice and coconut mixture. This batter also includes shallots and cumin seed, which gives the appam a different taste.
While making the batter everyone usually adds cooked rice to make a soft appam, but I am using soaked rice flakes instead. Rice flakes need to be soaked in water just before grinding.

How to make Kallappam
What you’ll need
Raw Rice – 2 cups
Grated Coconut – 1 cup
Rice Flakes (thin) – 3/4 cup
Shallots (sliced) – 4
Cumin Seeds – 1 tsp
Instant Yeast – 1/2 tsp
Sugar – 1/2 tsp
Salt – 1 tsp
Water – 1 cup
* Rice must be soaked for 6 hrs
* Rice flakes must be soaked in 3/4 cup of water for 10 min
How to cook it
- Add 1/2 tsp of sugar and 1/2 tsp of yeast into 1/4 cup of lukewarm water, mix and keep it aside.
- Add 2 cups of soaked rice and 3/4 cup of soaked rice flakes into a jar and grind it.
- Transfer the batter into a bowl. To make the batter smooth, I have added 3/4 cup of water while grinding.
- Add 1 cup of grated coconut, sliced shallots and 1 tsp of cumin seeds into the same jar. Also add the yeast mixture and grind them together.
- Add this coconut mixture into the rice batter. I have added 1/4 cup of water while grinding this coconut mixture.
- Mix it well. The consistency of this batter is like the dosa batter.
- Allow this mixture to ferment for minimum 8 hours.
- After 8-10 hours, check if the batter is fermented.
- Add 1 1/4 tsp of salt to the fermented batter and mix it well. Keep it aside for 30 minutes.
- To make the appam, place an iron skillet on the stove. You can use any pan.
- Using a fork and sliced shallot spread the oil on the skillet to prevent batter from sticking.
- Once the skillet is hot, pour a small ladle full of the batter and gently spread it.
- Close and cook till the surface of the appam is dry.
- Remove the lid and flip the appam.
- Once appam is cooked, take it off from the pan.
- Prepare the rest of the appam in the same way.
