Cake rusk is made by baking the cake pieces. They are very tasty and easy to make. You can bake them on a stove top or in an oven.
In this recipe, we will make a vanilla sponge cake first. Once it cools down, we cut it into pieces and bake the cake pieces.

How to make Cake Rusk
What you’ll need
Plain Flour – 1 cup
Butter – 100 gm
Sugar – 1/2 cup
Egg – 3
Baking Powder – 1 tsp
Salt – a pinch
Vinegar – 1/4 tsp
Vanilla Essence – 2 tsp
How to cook it
- Grease 8 inch baking tin with butter.
- Dust it with 1 tbsp of plain flour.
- Line the baking tin with parchment paper.
- Sift 1 cup of plain flour, a pinch of salt, 1 tsp of baking powder into a bowl and keep it aside.
- Add 100 gm of softened butter, 1/2 cup of sugar into another bowl and beat till it is pale in colour.
- Add 2 eggs, one at a time, and beat for 30 seconds each till it is pale in colour. Scrape off the sides of bowl.
- Add the 3rd egg, 2 tsp of vanilla essence, 1/4 tsp of vinegar and beat for 30 seconds.
- Scrape off the sides of bowl again.
- Add the sifted dry ingredients. Mix it slowly with the blender, once they are mixed switch on the blender and beat it for around 20 seconds till combined. Mix the batter with a spatula.
- Pour the batter into the greased baking tin and level it with a spatula.
- Swirl and tap to remove the air bubbles.
- Prepare a stove top by placing a heavy bottom vessel. Place a small hot pot stand in it and keep it on a medium-high heat for 10 minutes.
- Place the baking tin carefully on the hot pot stand. Close and cook on a medium heat for 50-55 minutes.
- After 50 minutes, check if the cake is baked.
- Once the cake is baked, take it off from the stove and place it on a cooling rack.
- Once the cake is cooled, unlock the tin, and remove the cake base and parchment paper. Cut the cake into pieces and keep it aside.
- Arrange the cake pieces into the 8 inch cake tin.
- Place the baking tin into the same heavy bottom vessel that was preheated on high heat for 10 minutes.
- Cook it for 10 minutes on a medium heat.
- After 10 minutes, flip the cake pieces and close and cook for 10 more minutes on a medium heat.
- After 10 minutes, flip the cake pieces and cook for 5 more minutes on a low heat.
- Once cake rusk is ready, take it off from the stove and let it cool completely.
- Cake Rusk is ready to serve.
To bake the Cake Rusk in oven:
- To prepare the cake in the oven, bake it in a preheated oven for 20-25 mins at 180°C.
- Once the cake is cooled down and cut into the shapes you want, arrange the cake pieces in a baking tin.
- Bake the cake pieces in a preheated oven for 10 mins at 180°C. After 10 mins, flip the cake pieces and bake them again for another 10 mins. After 10 mins, you can take the cake pieces out and keep them aside to cool down and serve later.
