Elanchi is a quick and tasty tea time snack. Elanchi/ Crepe is a type of pan cake with coconut filling. Kids will love this and it is a good lunch box snack.

Ingredients:
Plain Flour – 1 cup
Grated Coconut – 200 gm
Sugar – 2 1/4 tbsp
Egg – 1
Cardamom Powder – 1 1/2 tsp
Salt – 1/2 tsp
Water – 1 cup
Oil
Directions:
- To make the batter, blend 1 cup of plain flour, 1/2 tsp of salt, 1 egg along with water
- For this consistency, I added almost 1 cup of water
- To make stuffing, add 200 gm of grated coconut, 2 1/4 tsp of sugar, 1 1/2 tsp of cardamom powder and mix it well
- If you like, you can add chopped dry fruits or banana
- To make the pancake pour the batter on to a hot pan and spread it as shown
- Add few drops of oil and flip it (oil is optional)
- Spread the stuffing and roll the pan cake as shown
- Once it is ready, take it off from the pan
- Similarly prepare the remaining elanchis
- I made 8 elanchis using the batter and filling
