Ariyunda is a quite common and favourite sweet snack among Keralites. This made using Kerala brown rice, that you would get anywhere.
Let me show you how we can easily prepare this with just three main ingredients rice, grated coconut and jaggery.

How to make Ariyunda
Ingredients
Matta Rice – 2 cups (400 gm)
Grated Coconut – 1 1/2 cups (200 gm)
Jaggery – 300 gm
Water – 1/2 cup
Cardamom & Cumin Powder – 1 1/2 tsp
Directions:
- Let us wash and dry 2 cups of matta rice.
2. This is the rice after cleaning and drying it.
3. To roast the rice, keep a pan on the stove and add it. Stove must be on a medium flame/temperature.
4. Until the rice is roasted, keep on stirring it.
5. You can see the texture and color of rice getting changed.
6. Our rice is ready now. It took 16 minutes. Keep it aside and let it cool.
7. To melt jaggery, keep a sauce pan on the stove, add 300 gms of jaggery in pieces and 1/2 cup of water
8. Once the jaggery is melted, take it from the stove and keep it aside.
9. Strain the melted jaggery into a bowl, to remove the dirt in it.
10. Add 1 1/2 cups of grated coconut into a blender and blend it once. Do not make it as a paste.
11. The texture of the blended coconut must be like this.
12. Now, add the roasted & cooled rice to a blender and blend it to a fine powder.
13. The rice must be blended to a fine powder like this.
14. Take one scoop of powdered rice into a plate. This is to roll the rice balls while shaping it.
15. Now, keep a pan on the stove, add the blended coconut and saute it. This is to remove the moisture from the coconut and get it heated.
16. Coconut is ready, now keep it aside.
17. Add 1 cup of melted jaggery into the coconut and mix well. You can add more jaggery, if you want the rice balls to be very sweet.
18. Once the jaggery and coconut are mixed well, add the powdered rice and mix.
19. Now add 1 1/2 tsp of cardamom&cumin powder and mix well.
20. Mixture for rice balls is ready.
21. Now, roll the rice balls and coat it in the roasted rice powder as shown.
