Prawns roasted and then steamed in banana leaf to enhance the flavours.

Ingredients:
- Prawns – 250 gm
- Sliced Coconut – 1/4 cup
- Shallots – 6
- Green Chilly – 1
- Tomato – 1
- Ginger 1/2 inch
- Garlic – 2
- Salt – 3/4 tsp
- Turmeric Powder – 1/4 tsp
- Pepper Powder – 1/2 tsp
- Kashmiri Chilly Powder – 1 tsp
- Coriander Powder – 3/4 tsp
- Coconut Oil – 1 1/2 tbsp
- Curry leaves
- Cashew Nuts for garnish (Optional)
- Banana leaf
Directions:
1. First of all, slice shallots, ginger, garlic, chilly and tomato
2. Cook cleaned & deveined prawns with sliced coconut, turmeric powder, salt and pepper powder, in 1/3 cup of water
3. Once it starts boiling, cook it for another 2 mins
4. Once cooked, keep it aside
5. Keep a pan on the stove and add coconut oil
6. Once the oil is hot, add chopped shallots, ginger, garlic, curry leaves, green chilly with a pinch of salt and saute it
7. Close and cook it on a low flame
8. Add turmeric powder, corriander powder, pepper powder, chilly powder and saute it for a minute
9. Add and mix sliced tomato. Close and cook it for a min
10. Add prawns stock and cook it again
11. Add cooked prawns and mix it. Close and cook it on medium-high flame for 5 mins
12. Prawns is cooked now
13. Transfer the prawns from pan to the banana leaf, close and tie it
14. Keep it on a hot pan and close it, on low flame for 12-15 mins
15. Now prawns pollichatu is ready.
