Kichadi is a sour dish made with curd along and coconut mixture. This is a quick version if you cant find a Indian Cucumber you can easily make a kichadi with salad cucumber. This is very quick and easy recipe.U can have this kichadi with chapati, roti or rice.

Ingredients:
- Salad Cucumber – 1 (400 gm)
- Green Chillies – 3
- Grated Coconut – 100 gm
- Curd – 1 cup
- Mustard Seeds – 1 tsp
- Salt – 1/2 tsp
- Curry Leaves
- Water – 1/4 cup
- Dry Red Chillies – 2
- Coconut Oil – 1/2 tbsp
Directions:
- Peel, deseed and cut the cucumber as shown
- Slit the green chillies.
- Grind the coconut, then add mustard seed and grind it again along with water.
- I haved added 3-4 tbsp of water to make it a fine paste like this.
- Cook the cucumber in a pot with green chilly, curry leaves, salt and 1/4 cup of water.
- Stir it, then close it and cook for 10-12 minutes.
- Make sure to stir in between.
- Now its cooked, so add the coconut mixture. Stir it and cook for 5 minutes.
- Make sure to stir it in between.
- Now the gravy is cooked so add the curd and stir it continously. Do not over boil.
- Taste it and add salt if needed.
- Its ready now, lets take it off the stove.
- To make tempering, add coconut oil, mustard seeds, dry red chillies and curry leaves to a pan.
- Once the tempering is ready, add it to the kichadi gravy.
- Our salad cucumber kichadi is ready to be served.
