If you want to have a delicious vegitarian curry for chapati, you can go for this one. This red cow peas curry, called vanpayar curry in malayalam, is very easy to make and delicious. This is a one pot curry as everything is done in a pressure cooker. You do not need to soak the peas in advance to make this curry.

How to make Red Cow Peas Curry
What you’ll need
Red Cow Peas – 1 cup
Onion (finely chopped) – 1
Tomato (finely chopped) – 3
Ginger & Garlic Paste – 1 1/2 tsp
Coriander leaves (chopped)
Cumin – 1 tsp
Turmeric Powder – 1/2 tsp
Coriander Powder – 2 tsp
Kashmiri Chilli Powder – 2 tsp
Asafoetida – 1/4 tsp
Salt – 1 tsp
Sugar – 2 tsp
Oil – 3 1/2 tbsp
Lime Juice – 1/2 tsp
Water – 3 cups
Tips
- If you do not want the curry to be spicy, add only 1 tsp of kashmiri chilli powder instead of 2.
- Cooking time may wary based on the pressure cooker.
How to cook it
- Add 3 1/2 tbsp of oil into a pressure cooker.
- Once the oil is hot, add 1 tsp of cumin seeds.
- Add 1/4 tsp of asafoetida and finely chopped onions and mix. Stove must be on medium heat.
- Add 1 1/2 tsp of ginger&garlic paste and mix.
- Add 1 tsp of salt and mix.
- Once the onion is sauteed, add 1/2 tsp of turmeric powder, 2 tsp of coriander powder and mix.
- Add 2 tsp of kashmiri chilli powder and mix.
- Add chopped tomatoes and mix.
- Add the cleaned red cow peas and mix.
- Add 3 cups of water and let it boil. Stove must be on high heat.
- Once it starts boiling, close the cooker and cook till 8 whistles on a medium-high heat. Cooking time may wary based on the pressure cooker.
- Take it off from the stove after 8th whistle.
- Once the cooker is depressurized, place it back on the stove. Check the cooking of the peas.
- Check the salt.
- Add 1 tsp of sugar to balance the taste.
- Add 1 tsp more of sugar for little sweetness in the curry. This is optional.
- Switch off the heat and add 1/2 tsp of lime juice and chopped coriander leaves and mix. Take it off from the stove and serve it hot with chapati.
